Yesterday was my first time EVER meal prepping. I realized last week that my eating habits weren’t satisfactory. I would eat whatever was easy and fast to make which included; lunch meat sandwiches, peanut butter and jelly sandwiches, & basically any thing carbohydrate I could find in the refrigerator.

So I decided that I’ve had enough of my old “fast food” trend and wanted to start a new healthier “fast food” trend. With Pinterest’s help I came up with some healthy and delicious meals & snacks for the week.

Starting with my breakfast Frittata. Here is the recipe:

  • 1 package of chicken Sausage (Diced)
  • 1 Onion (Diced)
  • 1 package of spinach
  • Garlic (minced)
  • 1 cup of flour
  • 2 cups of milk
  • salt & pepper
  • Dijon Mustard

Preheat oven to 425. Start by browning the chicken sausage. After that move sausage to a plate and add the onions and garlic to the frying pan. While that is browning prepare the spinach. You can choose whatever method works for you, I boiled mine. Next, mix the onion and sausage mixture together and spread in a large baking dish. Next drain and spread the spinach to the dish. Crack the eggs in a big bowl, add the Dijon, salt and pepper, milk and flour. Whisk until flour is completely dissolved. Pour the egg mixture over the spinach and voila. Pop into the oven for about 25 minutes or when the egg is cooked. You can tell when the egg is cooked by poking with a fork and making sure it is dry.

Cut and put in the refrigerator. Microwave or bake to reheat! Makes for a healthy and filling breakfast or snack.

The second meal I prepared was grilled chicken breast, green beans, and pasta. Pretty self explainatory!!


  • The last thing I prepared was a Yogurt parfait. I did nonfat vanilla yogurt with bananas, strawberries, and granola. The parfaits in the picture do not have granola in them yet.IMG_2737
